    Prepare the Reduction

    In a saucepan, combine the white wine vinegar, dry white wine, chopped shallots, and half of the tarragon leaves. Bring to a boil and reduce the heat to a simmer. Cook until the liquid is reduced to about 2 tablespoons. Strain and set aside.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and the reduction until well combined.

    Cook the Sauce

    Place the bowl over a pot of simmering water (double boiler). Whisk continuously until the mixture thickens and doubles in volume.

    Incorporate the Butter

    Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. If the sauce is too thick, you can add a little water to adjust the consistency.
