Preparation Steps
- 1
Prepare the Salmon
Season the salmon fillets with salt and pepper. Heat a non-stick skillet over medium-high heat and add a tablespoon of olive oil. Once hot, place the salmon skin-side down in the skillet and sear for 4-5 minutes. Flip and cook for an additional 3-4 minutes until cooked through. Remove from heat and let cool.
- 2
Make the Vinaigrette
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, salt, and pepper to taste. Add chopped fresh basil leaves and mix well.
- 3
Assemble the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, dried cranberries, and candied pecans. Crumble goat cheese on top.
- 4
Add Salmon and Dressing
Flake the cooled salmon and add it to the salad. Drizzle the sweet basil vinaigrette over the salad and toss gently to combine.
