    Prepare the Ingredients

    Clean and debeard the mussels under cold running water. Discard any that are open and do not close when tapped.

    Cook the Chorizo

    In a large pot over medium heat, add the olive oil. Once heated, add the chorizo sausage. Cook for about 5 minutes until browned and the fat has rendered.

    Sauté Garlic and Add Tomatoes

    Add the minced garlic to the pot and sauté for 1-2 minutes until fragrant. Stir in the canned diced tomatoes with their juices.

    Make the Broth

    Pour in the lobster stock and bring to a simmer. Add the saffron threads and red chili flakes. Let the broth simmer for 5-10 minutes to allow flavors to meld.

    Cook the Mussels

    Add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

    Serve

    Ladle the mussels and broth into bowls, garnish with chopped parsley, and serve with crusty bread for dipping.
