Cook the Pasta
In a large pot of boiling salted water, cook the torchio pasta according to package instructions until al dente. Drain and reserve about 1 cup of the pasta water.

Prepare the Bacon and Sausage
In a large skillet over medium heat, add the olive oil. Once hot, add the smoky bacon and cook until crispy. Add the spicy Italian sausage to the skillet, breaking it apart with a spatula, and cook until browned and fully cooked.

Combine Garlic and Spices
Stir in the minced garlic and red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.

Mix Pasta and Sauce
Add the drained pasta to the skillet along with the reserved pasta water. Toss to combine, ensuring the pasta is well coated with the sauce.

Add Cheese and Speck
Remove the skillet from heat and stir in the grated Pecorino Romano cheese and crispy speck. Season with salt and black pepper to taste.

Serve immediately, garnished with additional Pecorino Romano cheese if desired.
