    Prepare the Rack of Lamb

    Preheat your oven to 400°F (200°C). Season the rack of lamb with salt, black pepper, and paprika.

    Sear the Lamb

    In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the rack of lamb for 3-4 minutes on each side until browned.

    Roast the Lamb

    Transfer the seared lamb to a baking dish and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Prepare the Ajo Blanco

    In a blender, combine almonds, garlic, 2 tablespoons of olive oil, white wine vinegar, and a pinch of salt. Add water until you achieve a smooth consistency.

    Blister the Cherry Tomatoes

    In the same skillet used for the lamb, add cherry tomatoes and cook over medium heat until blistered, about 5-7 minutes.

    Crispy Chickpeas

    Drain and rinse the canned chickpeas. Pat dry and toss with olive oil, salt, and paprika. Spread on a baking sheet and roast in the oven for 20 minutes or until crispy.

    Sauté the Kale

    In a separate pan, add the remaining olive oil and sauté the organic kale until wilted, about 5 minutes.

    Plate the Dish

    Slice the rack of lamb and serve on a plate. Add the sautéed kale, blistered cherry tomatoes, and crispy chickpeas. Drizzle with ajo blanco and garnish with fresh parsley.
