Preparation Instructions

  1. 1

    Prepare the Dressing

In a small bowl, whisk together olive oil, minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, salt, and black pepper until well combined.

  2. 2

    Grill the Romaine

Preheat the grill to medium-high heat. Cut the baby romaine heads in half lengthwise and brush the cut sides with a little olive oil. Place them on the grill, cut side down, and grill for about 2-3 minutes until charred and slightly wilted.

  3. 3

    Crisp the Asiago

While the romaine is grilling, place shredded asiago cheese in small mounds on a parchment-lined baking sheet. Bake in a preheated oven at 400°F (200°C) for about 5-7 minutes until melted and golden brown. Remove from the oven and let cool to crisp.

  4. 4

    Assemble the Salad

Once the romaine is grilled, place it on a serving platter. Drizzle with the prepared dressing and sprinkle the crispy asiago cheese on top. Season with additional salt and pepper if desired.

  5. 5

    Serve

Serve immediately while the romaine is warm and the asiago is crispy.
