Braised Short Ribs

    Prepare the Ribs

    Preheat the oven to 325°F (160°C). Season the short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onions, carrots, and garlic. Sauté until softened, about 5-7 minutes.

    Add Liquids and Herbs

    Pour in the Guinness and beef broth, scraping the bottom of the pot to deglaze. Add thyme and bay leaves.

    Braise Ribs

    Return the short ribs to the pot, cover, and transfer to the oven. Braise for 2.5 to 3 hours, until tender.

Horseradish Chive Whipped Potatoes

    Cook the Potatoes

    In a large pot, boil the cubed potatoes until tender, about 15-20 minutes. Drain.

    Whip the Potatoes

    Add butter, heavy cream, horseradish, chives, salt, and pepper to the potatoes. Mash and whip until smooth and creamy.

Smoked Tobacco Onions

    Prepare Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook until translucent.

    Add Seasoning

    Sprinkle smoked paprika, brown sugar, and salt over the onions. Cook until caramelized, about 10-15 minutes.
