    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Scrub the Russet potatoes under cold water and pat them dry with a towel.

    Season the Potatoes

    Pierce each potato several times with a fork. Rub each potato with olive oil, and sprinkle them generously with salt and pepper.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces through the potato.

    Prepare the Toppings

    While the potatoes are baking, prepare your toppings: chop the chives, and shred the cheddar cheese.
