Preparation of Unagi

    Prepare the Eel

    Rinse the freshwater eel under cold water and pat dry with paper towels. If the eel is not already filleted, carefully fillet it using a sharp knife.

    In a small saucepan, combine soy sauce, mirin, sake, and brown sugar. Heat over medium heat, stirring until the sugar dissolves. Bring to a simmer and reduce the sauce for about 10 minutes until slightly thickened.

Cooking the Eel

    Grill the Eel

    Preheat a grill or grill pan over medium-high heat. Brush the eel pieces with the sauce and grill for about 3-4 minutes on each side, basting with more sauce until the eel is caramelized and cooked through.

Serving
