Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed sushi rice and water in a rice cooker and cook according to the rice cooker's instructions.

    Prepare Vinegar Mixture

    In a small saucepan, heat rice vinegar, sugar, and salt over low heat until sugar and salt dissolve. Do not boil.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Fish and Seafood

    Slice Sashimi

    Using a sharp knife, slice the fresh tuna and salmon into thin pieces for sashimi.

    Prepare Ebi

    Blanch the ebi (shrimp) in boiling water for 1-2 minutes until they turn pink, then cool in ice water and peel.

    Prepare Octopus

    Slice the cooked octopus into thin pieces, ensuring even cuts for presentation.

Assemble Omakase Set

    Prepare Vegetables

    Thinly slice the avocado and cucumber.

    Assemble the Sushi

    On a bamboo mat, place a sheet of nori, spread a thin layer of sushi rice, and add slices of fish, avocado, and cucumber. Roll tightly and slice into pieces.

    Serve with Accompaniments

    Arrange the sushi rolls on a platter with sashimi, ebi, pickled ginger, and wasabi. Serve immediately.
