    Prepare the Vegetables

    Wash and peel the carrots and sweet potatoes. Cut all vegetables into thin fry-like strips (about 1/4 inch thick).

    Prepare the Frying Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Make the Batter

    Combine Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.

    Mix in Ice Water

    Gradually add the ice water to the dry mixture, stirring until just combined. The batter should be slightly lumpy; do not overmix.

Fry the Vegetables

    Coat the Vegetables

    Dip each vegetable strip into the batter, allowing excess batter to drip off.

    Fry the Vegetables

    Carefully place the battered vegetables into the hot oil in small batches. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally.

    Remove the fried vegetables from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt if desired and serve immediately.
