    Whisk the Ingredients

    In a mixing bowl, crack the 4 large eggs and beat them lightly with a whisk or fork until the yolks and whites are fully combined.

    Add Sweet Ingredients

    Add 2 tablespoons of sugar, 1 teaspoon of soy sauce, 1 tablespoon of mirin, and a pinch of salt to the beaten eggs. Whisk the mixture until all ingredients are well incorporated and the sugar is dissolved.

Cooking

    Heat the Pan

    Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil. Make sure the oil coats the bottom of the skillet evenly.

    Cook the Tamago

    Pour a small amount of the egg mixture into the skillet, enough to cover the bottom of the pan in a thin layer. Cook for about 1-2 minutes until the edges start to set.

    Roll the Tamago

    Using a spatula, carefully roll the cooked egg towards one side of the pan. Once rolled, push the rolled egg to the side of the skillet.

    Repeat the Process

    Add more egg mixture to the pan, lifting the rolled omelet to allow the uncooked egg to flow underneath. Cook until the edges set, then roll the omelet again. Repeat this process until all the egg mixture is used.

    Finish Cooking

    Once all layers are cooked and rolled, cook the omelet for another minute, then remove it from the heat. Let it cool slightly.

    Slice and Serve

    Once cooled, slice the Tamago into bite-sized pieces and serve it warm or at room temperature.
