Preparation of Octopus

    Cleaning the Octopus

    Begin by cleaning the octopus under cold running water. Remove any remaining insides and beak, and trim the tentacles if necessary.

    Tenderizing the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and boil for about 30-40 minutes until tender. You can test doneness by piercing a tentacle with a fork. Once cooked, remove from water and let cool.

    Slicing the Octopus

    Once cooled, slice the octopus into thin rounds or half-moons, about 1/4-inch thick.

Marinade Preparation

    Mixing the Marinade

    In a mixing bowl, whisk together soy sauce, sesame oil, rice vinegar, mirin, grated ginger, minced garlic, and chili flakes until well combined.

    Marinating the Octopus

    Place the sliced octopus into the marinade, making sure all pieces are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Serving the Dish

    After marinating, remove the octopus from the marinade and let excess marinade drip off. Arrange the slices on a serving plate.
