Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If you don't have a rice cooker, bring the rice and water to a boil in a saucepan, reduce heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed.

Season Rice
Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the rice and gently fold it in with a spatula. Let the rice cool to room temperature.
Prepare Spicy Tuna Mixture

Dice Tuna
Using a sharp knife, dice the fresh sushi-grade tuna into small cubes.

Mix Ingredients
In a bowl, combine the diced tuna, mayonnaise, sriracha sauce, sesame oil, and chopped green onion. Mix well until the tuna is evenly coated with the spicy mayo mixture.
Assemble Rolls

Prepare Cucumber
Slice the cucumber into thin strips.

Lay a sheet of nori, shiny side down, on a bamboo sushi mat.

Spread Rice
Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch of space at the top.

Add Fillings
In the center of the rice, place a line of the spicy tuna mixture and cucumber strips.

Roll Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with soy sauce on the side.
