    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water, stirring until a dough starts to form. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Roll the Dough

    After resting, divide the dough into small pieces. Roll each piece into a thin circle about 3 inches in diameter, dusting with flour to prevent sticking.

    Prepare the Filling

    In a food processor, add the raw shrimp, ground pork, green onions, ginger, garlic, soy sauce, sesame oil, and cornstarch. Pulse until a paste-like consistency is achieved, making sure not to over-process.

    Fill the Wrappers

    Take a dumpling wrapper, place about 1 tablespoon of the filling in the center, and fold the wrapper over the filling to form a half-moon shape. Pinch the edges to seal and pleat as desired.

Cooking and Serving

    Prepare a steamer by lining it with parchment paper. Place the shumai in the steamer, making sure they are not touching. Steam over simmering water for about 10-12 minutes until the shrimp is cooked through and the wrappers are translucent.

    In a small bowl, mix together soy sauce, rice vinegar, chili oil, and sugar until the sugar is dissolved.
