Method
Sea Urchin Preparation
- 1
Cleaning the Sea Urchins
Carefully use a pair of scissors or a knife to cut the top off each sea urchin. Make a circular cut around the top of the urchin, about 1 inch from the top. Be cautious as the shell is sharp.
- 2
Extracting the Uni
Rinse the insides gently with cold seawater or fresh water to remove any debris. Using a small spoon, scoop out the orange roe (uni) and place it in a bowl.
- 3
Seasoning the Uni
Sprinkle the extracted uni with sea salt and drizzle with lemon juice and olive oil. Gently toss to combine, ensuring not to break the delicate uni.
- 4
Chopping Chives
Finely chop the chives and sprinkle them over the seasoned uni for added flavor and garnish.
Serving Garnish
- 5
Preparing the Garnish
If using caviar, have it ready in a small serving dish. Rinse the microgreens and dry them gently. Slice the crusty bread into thin pieces.
- 6
Plating the Sea Urchin
Serve the seasoned uni in the cleaned sea urchin shells, garnished with microgreens on top. Optionally, add a dollop of caviar for an extra touch.
- 7
Serving
Place the sea urchin shells on a platter alongside the sliced crusty bread. Serve immediately and enjoy!
