    Prepare the Pork

    Cut the pork shoulder into bite-sized cubes and set aside.

    Chop the Vegetables

    Finely chop the onions, garlic, and ginger. Dice the tomatoes and set all aside.

    Saute the Aromatics

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sauté for 5-7 minutes until they are translucent. Then add the garlic and ginger, cooking for an additional 2 minutes.

    Stir in the curry powder, turmeric, cumin, coriander, chili powder, and salt. Cook for 1-2 minutes until the spices are fragrant.

    Brown the Pork

    Add the cubed pork shoulder to the pot, stirring to coat it with the spice mixture. Cook for about 5-7 minutes until the pork is browned on all sides.

    Stir in the diced tomatoes and add the coconut milk and water. Bring the mixture to a gentle simmer.
