Method
Preparation
Prepare the Oysters
Rinse the fresh oysters under cold water to remove any grit or debris. Pat them dry with paper towels.
Set Up Breading Station
In a shallow bowl, combine the all-purpose flour, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and buttermilk until well combined. In a third bowl, place the cornmeal.
Frying
Heat Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a kitchen thermometer or by dropping a small amount of batter into the oil; it should sizzle.
Bread the Oysters
Take each oyster and first dip it into the flour mixture, coating it evenly. Then, dip it into the egg and buttermilk mixture, allowing any excess to drip off. Finally, coat it with cornmeal, pressing gently to ensure it sticks.
Fry the Oysters
Carefully place the breaded oysters in the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.
Serving
Plate and Serve
Arrange the fried oysters on a serving platter. Serve them hot with lemon wedges and tartar sauce on the side for dipping.
