Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a bowl and rinse it under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker instructions, or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold to combine. Allow to cool to room temperature.

Preparing Fillings

    Prepare Tuna

    Slice the fresh tuna into thin strips or cubes, depending on your preference for sushi style.

    Slice Vegetables

    Peel and slice the cucumber into thin strips. Cut the avocado in half, remove the pit, and slice it into thin wedges.

Assembling Sushi

    Lay Nori

    Place a nori sheet on a bamboo sushi mat or a clean surface, shiny side facing up.

    Add Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top.

    Add Fillings

    Arrange a few strips of tuna, cucumber, and avocado across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, lift the edge of the mat closest to you and roll it over the fillings tightly. Continue rolling until you reach the exposed edge of the nori. Wet this edge to seal the roll.

    Slice and Serve

    With a sharp knife, slice the sushi roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
