Prepare the Broth

Combine Water and Dashi
In a large pot, combine 4 cups of water and 1 cup of dashi stock. Bring to a gentle simmer over medium heat.

Add Miso Paste
Once the broth is simmering, reduce the heat to low. In a small bowl, take a ladle of the hot broth and mix in 3 tablespoons of miso paste until smooth. Pour this mixture back into the pot and stir well to combine.

Add Tofu
Carefully add 1 cup of cubed firm tofu to the broth. Allow it to heat through for about 3-4 minutes.

Add Seaweed
Rehydrate 1 tablespoon of dried wakame seaweed in warm water for about 10 minutes, then drain. Add the wakame to the pot and simmer for another 2 minutes.

Add Green Onions
Slice the green onions and add them to the pot just before serving, reserving some for garnish.
Serve and Garnish

Garnish the Soup
Ladle the miso soup into bowls and sprinkle with toasted sesame seeds and additional green onions. If desired, add shichimi togarashi to taste for an extra kick.
