    In a large bowl, combine chopped kimchi, ground pork, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Gyoza Assembly

    After the dough has rested, divide it into small balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches in diameter). Place a tablespoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.

Cooking Gyoza

    Fry and Steam the Gyoza

    In a large skillet, heat oil over medium-high heat. Arrange the gyoza in the skillet, flat side down, and cook for about 2-3 minutes until the bottoms are golden brown. Carefully pour in 1 cup of water and cover immediately. Steam for 5-7 minutes or until the water is evaporated and the gyoza are cooked through.
