Preparing Sushi Rice

    Rinse the Rice

    In a large bowl, rinse the sushi rice under cold running water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil, reduce to low heat, cover, and simmer for 18-20 minutes.

    Prepare Sushi Vinegar

    In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve. Do not boil.

    Mix Rice with Vinegar

    Once the rice is cooked, transfer it to a large bowl. Gently fold in the sushi vinegar mixture using a wooden spatula. Let it cool to room temperature.

Preparing Toppings

    Slice the Fish

    Using a sharp knife, slice the fresh tuna and salmon into thin sashimi-style pieces.

    Prepare Vegetables

    Cut the avocado in half, remove the pit, and slice the flesh into thin strips. Cut the cucumber into thin matchsticks.

    Prepare Nori Sheets

    If preferred, lightly toast the nori sheets over an open flame for a few seconds to enhance flavor.

Assembling Kikusui

    Lay the Nori

    Place a nori sheet shiny side down on a bamboo sushi mat.

    Add Sushi Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Toppings

    Place slices of tuna, salmon, avocado, and cucumber in a line across the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to create a tight roll. Seal the edge with a bit of water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife between cuts for clean edges.

Serving

    Plate and Serve

    Arrange the sushi pieces on a serving platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
