    Begin by cleaning the Kanpachi thoroughly under cold running water. Pat it dry with paper towels.

    Using a sharp knife, slice the Kanpachi into 1-inch thick slices or cubes, depending on your preference.

Marinade

    Mix Marinade Ingredients

    In a bowl, combine soy sauce, mirin, sesame oil, grated ginger, minced garlic, and lime juice. Whisk until well blended.

    Marinate Fish

    Place the sliced Kanpachi in a shallow dish or a resealable bag. Pour the marinade over the fish, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to infuse.

    While the fish is marinating, slice the green onions and chop the cilantro. Toast the sesame seeds in a dry skillet over medium heat until golden brown, stirring frequently.
