Method
Preparing Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed rice and water in a rice cooker. Cook according to the rice cooker's instructions, or bring to a boil in a pot, then reduce to low heat, cover, and simmer for 20 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
Preparing Sashimi Toppings

Slice the Fish
Carefully slice the fresh salmon and tuna fillets into thin sashimi pieces. Arrange on a platter.

Prepare Shrimp
Blanch the shrimp in boiling water for 2 minutes, then cool in ice water. Arrange alongside the sashimi.

Prepare Garnishes
Cut nori sheets into strips and arrange them on the platter. Add pickled ginger and wasabi for serving.
Making Miso Soup

Heat Dashi Stock
In a pot, heat the dashi stock over medium heat until it begins to simmer.

Add Miso Paste
Dissolve the miso paste in a small amount of hot dashi stock, then stir it back into the pot. Do not boil the soup after adding miso.

Add Tofu and Wakame
Add diced tofu and rehydrated wakame to the soup. Heat through for a few minutes.

Finish with Green Onions
Just before serving, add the chopped green onions to the soup.
