Tea Preparation

Boil Water
In a pot, bring 4 cups of water to a boil over medium-high heat.

Steep Tea
Once the water is boiling, remove it from the heat and add 2 tablespoons of Japanese green tea leaves. Let it steep for about 3-5 minutes, depending on your desired strength.

Strain Tea
After steeping, strain the tea leaves from the liquid using a fine mesh strainer. Set the brewed tea aside to cool slightly.
Pineapple Infusion

Prepare Pineapple
In a bowl, combine 1 cup of diced fresh pineapple, 2 tablespoons of honey, and 1 tablespoon of lemon juice. Mix well until the honey is fully incorporated.

Add Mint
Gently tear the 6 fresh mint leaves and add them to the pineapple mixture. Stir gently to combine.

Infuse
Let the pineapple infusion sit for about 10 minutes to allow the flavors to meld together.

Combine
In a large pitcher, combine the brewed tea and the pineapple infusion. Stir gently to mix.

Pour the tea into cups, garnish each with a lemon slice and a mint sprig. Serve chilled or over ice for a refreshing drink.
