    Prepare the Hamachi

    Rinse the Hamachi under cold water and pat it dry with paper towels. Place it on a cutting board and use a sharp knife to slice it into thin sashimi-style pieces.

Marinade

    Make the Marinade

    In a medium bowl, whisk together the soy sauce, mirin, sesame oil, grated ginger, and minced garlic until combined.

    Marinate the Fish

    Place the sliced Hamachi in a shallow dish and pour the marinade over the fish. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.

Serving

    Plate the Hamachi

    After marinating, remove the Hamachi from the refrigerator. Arrange the slices on a serving platter.

    Sprinkle the sliced scallions and toasted sesame seeds over the Hamachi. Serve with lemon wedges on the side for squeezing over the fish.
