Shrimp Preparation

Prepare the Shrimp
In a mixing bowl, combine the flour, cornstarch, salt, and black pepper. In another bowl, whisk the eggs until well combined.

Coat the Shrimp
Dip each shrimp into the egg mixture, then dredge it in the flour-cornstarch mixture until evenly coated. Shake off any excess.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Fry the shrimp in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
Stir in the Sriracha sauce, honey, soy sauce, and rice vinegar. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.

Toss the Shrimp
In a large bowl, combine the fried shrimp and the firecracker sauce. Toss until the shrimp are well coated.

Transfer the coated shrimp to a serving platter, garnish with sliced green onions, and serve immediately.
