Method

Wrapper Preparation

1

Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Mix well. Create a well in the center and add the water and beaten egg. Stir until the mixture comes together into a dough.

2

Knead the Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until it is smooth and elastic. Cover it with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

3

Cook the Filling

In a large skillet over medium heat, add ground pork (or chicken) and cook until browned. Add garlic, ginger, cabbage, carrot, and green onion. Stir-fry for about 5-7 minutes until vegetables are tender.

4

Season the Filling

Add soy sauce, sesame oil, and pepper to the filling mixture. Stir well and cook for an additional 2 minutes. Remove from heat and let cool.

Assembly and Cooking

5

Roll the Egg Rolls

Divide the rested dough into 6 equal pieces. Roll each piece into a thin circle on a floured surface. Place a spoonful of filling in the center of each wrapper. Fold in the sides and roll tightly to form an egg roll.

6

Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

7

Fry the Egg Rolls

Carefully place the egg rolls in the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
