For the Inari Curd

Drain the firm tofu and press it between paper towels to remove excess moisture. Crumble it into a bowl.

In a separate bowl, whisk together soy sauce, mirin, sesame oil, ground ginger, cornstarch, and water until smooth.

Add the crumbled tofu to the sauce mixture and stir until fully coated.
