Clean the Shrimp
Gently rinse the Ama Ebi under cold running water to remove any impurities. Pat them dry using a paper towel.

Peel the Shrimp
Carefully peel the shells off the Ama Ebi, starting from the head and working towards the tail. Make sure to leave the tail intact for presentation.

Devein the Shrimp
Using a small knife, make a shallow cut along the back of each shrimp to expose the intestinal tract. Remove the vein carefully.

Place the cleaned and deveined Ama Ebi on a plate and refrigerate for about 10 minutes to enhance sweetness and flavor.

Once chilled, arrange the Ama Ebi on a serving plate, tail side up for an attractive presentation.

Serve the Ama Ebi with a small dish of soy sauce, a dollop of wasabi, and pickled ginger on the side.
