Method

Prepare Tofu

    Press Tofu

    Wrap the firm tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture for about 30 minutes.

    Cut Tofu

    Once pressed, cut the tofu into 1-inch cubes.

    Coat Tofu

    In a bowl, add the cornstarch and gently toss the tofu cubes to coat them evenly.

Fry Tofu

    Heat Oil

    In a deep pot or fryer, heat the vegetable oil to 180°C (350°F).

    Fry Tofu

    Carefully add the coated tofu cubes to the hot oil in batches. Fry until golden brown, about 3-4 minutes.

    Drain Tofu

    Using a slotted spoon, remove the tofu and drain on paper towels to remove excess oil.

Prepare Dashi Sauce

    Combine Ingredients

    In a small saucepan, combine the dashi stock, soy sauce, and mirin. Stir well.

    Heat Sauce

    Heat the mixture over medium heat until just simmering. Do not boil.

Serve

    Plate Tofu

    Place the fried tofu cubes on a serving plate.

    Add Sauce

    Pour the warm dashi sauce over the tofu.

  3. 11

    Garnish

    Top with chopped green onions, grated daikon radish, and bonito flakes.
