Press tofu to remove excess moisture for at least 20 minutes, then cut into 1-inch cubes.

Slice pickled red chillies and chop green onions. Mince garlic and ginger.

Cook chick'n
In the same pan, heat the remaining 1 tbs oil. Add plant-based chick'n strips and cook for 3–5 minutes or until lightly browned. Remove and set aside.

Make the stir-fry
Lower heat to medium. In the same pan, add garlic and ginger and sauté for 30 seconds until fragrant. Add soy sauce, dark soy sauce, brown sugar, rice vinegar, and pickled chillies. Stir to combine.

Return tofu and chick'n to the pan. Stir-fry for another 3–4 minutes, ensuring everything is evenly coated in the sauce. Add green onions and toss well.
Serving

Serve hot, garnished with sesame seeds and chopped cilantro if desired. Pairs well with steamed jasmine rice or noodles.
