Prepare all vegetables by washing, peeling, and slicing them as needed: julienne the carrot, slice the bell pepper and mushrooms, chop the bok choy, and trim the bean sprouts.

If using dried ho fun noodles, soak them in warm water according to package instructions until tender, then drain. If using fresh noodles, separate them gently to avoid tearing.

In a small bowl, mix together the soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar, white pepper, and water to create the stir-fry sauce. Set aside.
Stir-Frying

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Add the garlic and ginger, and stir-fry for 30 seconds until fragrant.

Add the bok choy and bean sprouts, and stir-fry for another 2 minutes.

Push the vegetables to one side of the wok and add the remaining 1 tablespoon of oil. Add the rice noodles and stir-fry for 1–2 minutes until heated through.

Pour the sauce over the noodles and vegetables. Toss everything together gently to ensure even coating and to avoid breaking the noodles. Stir-fry for another 2 minutes.

Add the sliced scallions, stir briefly, and remove from heat.
