Prepare the Filling

    Drain and crumble tofu

    Drain the firm tofu and pat dry with paper towels. Crumble it into small pieces using your hands or a fork.

    Chop mushrooms

    Finely chop the shiitake mushrooms. If using dried mushrooms, rehydrate them in warm water for 20 minutes before chopping.

    Mix filling

    In a mixing bowl, combine tofu, mushrooms, green onions, ginger, soy sauce, sesame oil, cornstarch, salt, and black pepper. Mix well until evenly combined.

Assemble Dumplings

    Fill dumplings

    Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of filling into the center.

    Seal dumplings

    Dip your finger in water and moisten the edge of the wrapper. Fold the wrapper over the filling to form a half-moon shape and press the edges to seal. Optionally pleat the edges for a decorative touch.

Steam Dumplings

    Prepare steamer

    Line a steamer basket with parchment paper or cabbage leaves to prevent sticking. Bring water to a boil in a pot or wok fitted with the steamer.

    Steam dumplings

    Place dumplings in the steamer basket, leaving space between each. Cover and steam over medium-high heat for 8–10 minutes, or until the wrappers are translucent and cooked through.
