Make the Filling

In a food processor, pulse the cooked edamame until finely chopped but not pureed.

Transfer the edamame to a mixing bowl and add the minced garlic, ginger, green onions, soy sauce, sesame oil, chili garlic sauce, crumbled tofu, salt, and black pepper. Mix thoroughly until well combined.
Assemble the Dumplings

Take one dumpling wrapper and place about 1 teaspoon of the filling in the center.

Moisten the edges of the wrapper with water, fold it in half to form a half-moon shape, and press the edges together to seal. Optionally, pleat the edges for a traditional look. Repeat with remaining wrappers and filling.
Steam the Dumplings

Line a bamboo or metal steamer with parchment paper or lightly oil the surface to prevent sticking.

Place the dumplings in the steamer in a single layer, making sure they don’t touch each other.

Steam over boiling water for 7–8 minutes, or until the wrappers turn slightly translucent and the filling is heated through.
Prepare the Dipping Sauce

In a small bowl, whisk together soy sauce, rice vinegar, chili oil, sesame seeds, and green onions. Set aside.
