Cook the egg noodles according to package instructions. Drain and rinse under cold water. Set aside.

Mix all the sauce ingredients in a small bowl and set aside.
Cooking

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Add Sichuan peppercorns and dried chilies. Stir-fry for about 30 seconds until fragrant, but not burnt.

Add garlic and ginger. Stir-fry another 30 seconds.

Add the sliced vegetables (carrot, bell pepper, scallions) and stir-fry for 2–3 minutes until just tender.

Add the optional cooked protein and stir-fry for another 1–2 minutes to heat through.

Push the vegetables to the side of the wok and add the remaining 2 tablespoons of oil. Add the cooked noodles and toss to coat in oil.

Pour in the sauce mixture and toss everything together until evenly coated and heated through, about 2–3 minutes.

Add bean sprouts and stir-fry for 30 seconds. Taste and adjust seasoning if needed.
Serving
