Prepare the Cucumbers

Smack the cucumbers
Wash the cucumbers and trim off the ends. Place them on a cutting board and use the flat side of a knife or rolling pin to smack them until they crack open and split. Cut into bite-sized chunks.

Place the cucumber pieces in a colander, sprinkle with 1 tsp of salt, toss gently, and let them sit for 15 minutes to draw out excess moisture. Then pat dry with paper towels.
Make the Sauce

In a bowl, combine minced garlic, chili oil, soy sauce, rice vinegar, sesame oil, sugar, scallions, and red pepper flakes (if using). Mix well until sugar dissolves.
Combine and Serve

Place the drained cucumbers in a serving bowl. Pour the spicy garlicky sauce over them and toss to coat evenly.

Garnish with toasted sesame seeds and chopped cilantro if desired. Serve immediately or chill for 10–15 minutes for enhanced flavor.
