Black Pepper Sauce
Prep the Mushrooms
1. Clean the king oyster mushrooms with a damp cloth and cut them into thick slices or batons, about 1/2 inch thick.
2. Toss mushroom pieces in 3 tablespoons of cornstarch until evenly coated. Shake off excess.
Fry the Mushrooms
3. Heat 3 tablespoons of vegetable oil in a non-stick or cast iron skillet over medium-high heat.
4. Add the mushrooms in batches and fry until golden brown and crispy on all sides, about 2–3 minutes per side. Remove and drain on paper towels.
Make the Sauce
5. In a small bowl, mix soy sauce, oyster sauce, water, sugar, and black pepper. In a separate bowl, mix 1 tsp cornstarch with 1 tbsp water to make a slurry.
7. Pour in the black pepper sauce mixture and bring to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens, about 1 minute.
Combine and Serve
8. Add the fried mushrooms to the sauce and toss to coat evenly.
9. Garnish with sliced green onions and serve sizzling hot, ideally on a preheated cast iron plate.
