Method
Prepare Filling
- 1
In a large mixing bowl, combine ground pork, chopped shrimp, water chestnuts, and green onions.
- 2
Add soy sauce, oyster sauce, sesame oil, sugar, cornstarch, white pepper, and salt. Mix thoroughly until the mixture is sticky and well combined.
Assemble Dumplings
- 3
Place a wonton wrapper in the palm of your hand. Spoon about 1 tablespoon of filling into the center.
- 4
Gather the edges of the wrapper up around the filling, leaving the top open. Press gently to shape into a cylinder, smoothing the sides.
- 5
Top each dumpling with a small amount of grated carrot and an optional pea or fish roe for garnish.
Steam Dumplings
- 6
Line a steamer basket with parchment paper or cabbage leaves to prevent sticking.
- 7
Place dumplings in the steamer, leaving a little space between each.
- 8
Steam over simmering water for 8–10 minutes, or until the filling is fully cooked.
Serve
- 9
Serve hot with soy sauce, chili oil, or your preferred dipping sauce.
