Dough

Method

Prepare the Dough

  1. 1

    Mix dry ingredients

In a large bowl, whisk together the flour, sugar, instant yeast, baking powder, and salt.

  2. 2

    Add wet ingredients

Add warm water and vegetable oil to the dry ingredients. Mix until a dough forms.

  3. 3

    Knead the dough

Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic.

  4. 4

    First rise

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

Shape and Steam Buns

  1. 5

    Divide and shape

Divide the dough into 10 equal pieces. Roll each piece into an oval shape about 4 inches long and 3 inches wide.

  2. 6

    Fold into lotus shape

Brush the surface of each oval with oil and fold in half lengthwise to create a semi-circle, resembling a lotus leaf.

  3. 7

    Second rise

Place each bun on a parchment square and let rest for 20 minutes to puff slightly.

  4. 8

    Steam the buns

Steam the buns in a bamboo steamer over boiling water for 10–12 minutes until soft and fluffy. Do not open the lid during steaming.
