    Clean and slice king oyster mushrooms into bite-sized pieces, about 1/2 inch thick. Optionally score the surface lightly with a crosshatch pattern to help absorb flavor.

    In a small bowl, mix all sauce ingredients together: soy sauce, dark soy sauce, vinegar, sugar, cornstarch, and water. Stir until smooth and set aside.

Cooking

    Heat vegetable oil in a wok or large skillet over medium-high heat.

    Add dried red chilies and Sichuan peppercorns. Stir-fry until fragrant, about 30 seconds, being careful not to burn them.

    Add the sliced king oyster mushrooms. Stir-fry for 5–7 minutes until they are browned and tender.
