Method
Prepare Filling

In a mixing bowl, combine ground pork, chopped cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and white pepper. Mix thoroughly until well combined.
Assemble Dumplings

Place about 1 tablespoon of filling in the center of each dumpling wrapper.

Dip your finger in water and moisten the edge of the wrapper.

Fold the wrapper over the filling to form a half-moon shape. Press the edges firmly to seal, pleating if desired.
Cook Dumplings

Heat vegetable oil in a non-stick skillet over medium heat.

Place dumplings in the skillet, flat side down. Fry for 2-3 minutes or until the bottoms are golden brown.

Add 1/4 cup of water to the skillet and immediately cover with a lid. Let the dumplings steam for 5-6 minutes, or until the water has evaporated and the dumplings are cooked through.

Remove lid and allow dumplings to fry for an additional 1-2 minutes for a crisp bottom.
Serve

Serve dumplings hot with optional dipping sauce made from soy sauce, rice vinegar, and chili oil.
