Drain the tofu and press to remove excess moisture. Cut into 1-inch cubes.

Cook the noodles according to package instructions. Drain and set aside.

Julienne the carrot, slice the bell pepper, chop the green onions, and mince the garlic and ginger.
Cooking

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until golden and crispy on all sides, about 6–8 minutes. Remove and set aside.

Return the tofu to the skillet. Add cooked noodles, soy sauce, and sesame oil. Toss everything together and stir-fry for another 2–3 minutes until heated through.
