    Prepare the Prime Rib

    Take the prime rib roast out of the refrigerator and let it sit at room temperature for about 2 hours before cooking. This helps the meat cook evenly.

    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, and dried thyme. Rub the olive oil all over the roast, then generously apply the seasoning mixture to all sides of the meat, pressing it in to adhere.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roasting the Prime Rib

    Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes to develop a nice crust. Then reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare or 140°F (60°C) for medium.

    Rest the Meat

    Once the desired internal temperature is reached, remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes before carving. This allows the juices to redistribute throughout the meat.
