Method
Preparation of Salmon
Preheat the Oven
Preheat your oven to 375°F (190°C).
Prepare the Salmon
Rinse the Alaska Coho Salmon fillets under cold water and pat them dry with paper towels.
Season the Salmon
In a small bowl, mix olive oil, salt, black pepper, and lemon juice. Brush this mixture over the salmon fillets.
Preparation of Crab Topping
Mix the Crab Topping
In a medium bowl, combine the fresh crab meat, mayonnaise, Dijon mustard, chopped parsley, Old Bay seasoning, and lemon zest. Stir gently to combine, being careful not to break up the crab meat too much.
Baking
Bake the Salmon
Place the seasoned salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 minutes.
Add Crab Topping
After 15 minutes, remove the salmon from the oven and carefully spoon a generous amount of the crab topping over each fillet.
Finish Baking
Return the salmon to the oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serving
Serve
Remove from the oven and let it rest for a few minutes before serving. Garnish with additional lemon wedges if desired.
