Cook the Potatoes
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced potatoes. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until golden and crispy. Remove from heat and keep warm.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the diced bell peppers and onion. Sauté for 5-7 minutes until the vegetables are soft and slightly caramelized.

Add the Prime Rib
Add the diced prime rib to the skillet with the sautéed vegetables. Stir and heat through for about 2-3 minutes.

Add the Cheese
Sprinkle the shredded pepper jack cheese over the scrambled egg mixture. Stir until the cheese is melted and combined.

Assemble the Burritos
Warm the flour tortillas in a dry skillet or microwave until pliable. Spoon an equal amount of the prime rib and egg mixture onto the center of each tortilla.

Roll the Burritos
Fold the sides of the tortilla inwards and then roll from the bottom up, enclosing the filling. Repeat with the remaining tortillas.

Serve the burritos warm alongside the prepared breakfast potatoes or hash browns.
