Taco Salad

Prepare the Ingredients
Wash and chop the romaine lettuce, cherry tomatoes, and cucumber. Set aside.

Cook the Protein
In a skillet, cook the ground beef or chicken with taco seasoning until fully cooked. Drain any excess fat and set aside.

Assemble the Salad
In a large bowl, combine the chopped lettuce, tomatoes, cucumber, and cooked protein. Top with shredded cheese, sour cream, guacamole, and tortilla chips.
Beef or Chicken Fajitas

Prepare the Vegetables
Slice the bell peppers and onion into thin strips.

Cook the Protein and Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced vegetables and stir-fry for 2-3 minutes. Add the beef or chicken and fajita seasoning, cooking until the protein is done.

Serve the fajita mixture in warm flour tortillas.
Chicken Enchiladas

Preheat your oven to 350°F (175°C).

Prepare the Enchiladas
In a bowl, mix shredded chicken with a little enchilada sauce. Fill each corn tortilla with the mixture, roll them up, and place them seam-side down in a baking dish.

Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
