Make the Biscuits
Preheat your oven to 450°F (232°C). In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 0.5 teaspoons of salt. Mix well.

Cut in Butter
Add 0.5 cups of cold unsalted butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in 0.75 cups of buttermilk and stir until just combined. Do not overmix.

Shape and Bake Biscuits
Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter. Place them on a baking sheet and bake for 12-15 minutes or until golden brown.

Prepare the Sausage Gravy
In a skillet, cook 1 lb of breakfast sausage over medium heat until browned. Break it apart with a spatula as it cooks.

Make Roux for Gravy
Once the sausage is fully cooked, sprinkle 0.25 cups of all-purpose flour over the sausage. Stir to combine and cook for 1-2 minutes until the flour is lightly golden.

Gradually whisk in 2 cups of milk, stirring constantly. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes. Season with 1 tsp of black pepper to taste.
