    Prepare the Egg Mixture

    In a large mixing bowl, whisk together the eggs, whole milk, salt, and black pepper until fully combined and slightly frothy.

    Cook the Eggs

    In a large skillet, melt the unsalted butter over medium-low heat. Pour in the egg mixture and let it sit for a few moments until the edges begin to set. Gently stir with a spatula, pushing the eggs from the edges to the center, until they are softly scrambled and slightly runny. Remove from heat and serve immediately.

Country Fried Potatoes

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into small cubes (about 1-inch).

    Cook the Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the cubed potatoes, garlic powder, paprika, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

    Mix the Muffin Batter

    Preheat the oven to 375°F (190°C). In a large bowl, mix together the flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries or chocolate chips.

    In a medium bowl, mix together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

    Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into squares. Place a small spoonful of the cream cheese mixture in the center of each square. Fold the corners of the pastry over the filling to form a pocket. Brush the tops with beaten egg for a golden finish. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown.
