Guacamole

Method

Guacamole

  1. 1

    Prepare the Avocados

Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

  2. 2

    Mash the Avocados

Using a fork, mash the avocados to your desired consistency (smooth or chunky).

  3. 3

    Add Ingredients

Add lime juice, salt, diced onion, chopped cilantro, and diced tomato to the mashed avocados. Stir until well combined.

  4. 4

    Taste and Adjust

Taste the guacamole and adjust seasoning with more salt or lime juice, if needed.

Salsa

  1. 5

    Prepare Ingredients

Wash the fresh tomatoes, jalapeño pepper, and cilantro thoroughly. Dice the tomatoes and onion, and finely chop the jalapeño (removing seeds for less heat).

  2. 6

    Mix the Salsa

In a large bowl, combine the diced tomatoes, red onion, jalapeño, lime juice, chopped cilantro, and salt. Stir until well mixed.

  3. 7

    Taste and Adjust

Taste the salsa and adjust seasoning with more salt or lime juice, if desired.

Queso Dip

  1. 8

    Melt Cheeses

In a saucepan over medium heat, combine cheddar cheese, cream cheese, and milk. Stir continuously until melted and smooth.

  2. 9

    Add Chilies and Seasoning

Add the can of diced green chilies, garlic powder, and salt to the melted cheese mixture. Stir until evenly combined.

  3. 10

    Heat Through

Continue to heat the queso dip for an additional 3-5 minutes, stirring frequently until hot.

  4. 11

    Serve Warm

Transfer the queso dip to a serving bowl and serve warm with tortilla chips.
